Martin Jean, Head Sommelier

Guided by passion and excellence, Martin Jean masterfully oversees one of the most magnificent wine cellars in France and the entire world. 

Sommellerie is a complex art form in which Martin Jean excels, having inherited this universe at a very early age. "My father is a very passionate wine-lover. He has always loved making new discoveries, attending tasting sessions. He initiated me into this world." Martin Jean's career began at the Hostellerie de Levernois and continued in Courchevel before reaching a turning point when he joined the Domaine Les Crayères in 2013. "Working here has allowed me to develop and grow with our wine producers, and thus be lucky enough to succeed Philippe Jamesse," says this young prodigy, promoted to the rank of Head Sommelier in 2019, and proposing the "World's Finest Champagnes" in 2021, the "World's Finest Wine List" in 2022, according to The World of Fine Wine.

In Martin Jean's opinion, perfect "wine and dish pairing" does not exist; only perfect "wine-dish-client pairing" exists. The client is as important as the dish, and it is up to the sommelier to find the right blend, the perfect match, in this triptych. The life of a Head Sommelier also involves the search for new products. It is, however, a tough challenge to extend a cellar already offering 965 references in Champagne! "I participate each week in tastings. The region is very lively. The producers are the same, but when a new generation takes over the reins, it gives birth to new vintages. Many possibilities are offered such as playing on different blends of champagne, vinification in barrels or vats." Potential for aging is another facet of his selection criteria: "Champagnes age very well, more so than wine, thanks, among other things, to their effervescence. After a period of aging, they offer more complexity."

Always characterized by deep humility and kindly discretion, Martin Jean shares his passion with his enjoyment of providing service, accompanied by a team of 11 sommeliers, including nine in the 2-star restaurant Le Parc. In conclusion: "Our role is to make wine accessible by simplifying the language of sommellerie". One thing is for sure, Martin Jean can look forward to some really great years.
